Rachel De Thample

Natural Chef Course Director

Qualifications: Trained Natural Chef

Background: Rachel has worked in the kitchens of Marco Pierre White, Heston Blumenthal and Peter Gordon. She is the author of Less Meat, More Veg, FIVE, Tonics & Teas, Gifts from the Modern Larder and The River Cottage Fermentation Handbook. Rachel has served as Commissioning Editor of Waitrose Food Illustrated and Head of Food for the pioneering organic box scheme Abel & Cole, where she worked for 12 years. Rachel helped set up numerous local food initiatives, including the award-winning Crystal Palace Food Market and the Edible Garden.

Francesca Klottrup

Education Director Natural Chef

Qualifications: Trained Natural Chef, CNM Diploma in Naturopathic Nutrition and Naturopath

Background: A trained chef, food writer and stylist, Francesca honed her cooking skills in London’s competitive kitchens and travelling the world catering for private clients. With a keen interest in health she qualified as a Nutritional Therapist to deepen her therapeutic knowledge and now works as a Nutrition and Cookery consultant for commercial enterprises.

Adria Wu

Natural Chef Lecturer

Qualifications: Trained Natural Chef

Background: Canadian-born Adria Wu is the founder and chef behind Maple & Co, a successful chain of health-focused cafes, one of which is housed in CNM London. Adria’s cooking influences extend well beyond her native Canada, however, as she’s worked and travelled across the world. She’s always had an insatiable hunger for cooking which was the driving force to her leaving the corporate world to study at the College of Naturopathic Medicine. Maple & Co. has been named by TimeOut as “One of London’s Best Healthy Eateries” and has also been featured in The Telegraph, The Times and Conde Nast Traveler. Adria is also a resident chef and presenter on Channel 4’s Sunday Brunch.

Åsa Linea Simonsson

Natural Chef Lecturer

Qualifications: Trained Natural Chef, CNM Diploma in Naturopathic Nutrition

Background: Asa has over 20 years’ experience in the medical and healthcare industries and is passionate about inspiring people to improve their health through nutrition. She started her career as a nurse around twenty-five years ago in Sweden, moving to England in her twenties to start a business selling natural organic health and beauty products. Asa now runs Linéa Nutrition. She’s a fermentation specialist and is the author of the winner of ‘Best Fermentation Book UK’ in the Gourmand World Cookbook Awards, ‘Fermentation: How to make your own sauerkraut, kimchi, brine pickles, kefir, kombucha, vegan dairy, and more.’

Nadia Brydon

Natural Chef Lecturer

Qualifications: Vegan Natural Chef, Naturopath, Nutritionist, Homeopath, Herbalist, Acupuncturist

Background: Nadia has qualifications in Western Herbal Medicine, Chinese Herbal Medicine, Acupuncture, Reflexology, Aromatherapy, Bowen Therapy, Iridology, Vodder Lymph Drainage Massage, sports injuries and Ayurvedic Massage Therapy. She is presently completing her training in Ho Homeopathy. In addition she qualified in Florida as an Hippocrates Health Educator and in California as an Associate Raw and Living Food Chef and Instructor.

Mariko Bangerter

Natural Chef Lecturer

Qualifications: CNM Diploma in Naturopathic Nutrition and Naturopathy.

Background: Mariko worked as a pastry chef in London restaurants before her own health issues and burn out led her to re-evaluate. She began a journey of self-discovery and retrained as a Nutritional Therapist and Naturopath. This combines her cooking expertise with her therapeutic knowledge of food in her own Nutritional Practise as well as lecturing on the Natural and Vegan Natural Chef diplomas.

Matt Inwood

Natural Chef Lecturer

Twenty years as a designer and art director has given Matt the opportunity to work with some of the most talented people working in food and publishing. From world-renowned chefs, such as Tom Kerridge, Jason Atherton, Claire Clark and Philip Howard, to some of the most well-respected and talented food writers around. Matt has worked with some of the world’s largest food brands, from MasterChef to Marmite, and with some of the best food photographers in the business, including David Loftus and Jean Cazals. Phone photography and Instagram has become a specialism. He produces photographic content for a number of different clients, such as Norma Restaurant, especially for social media purposes, and teach workshops across the country to share those skills with small, medium and large business owners.

Peter Jackson-Main

Academic Director & Herbal Medicine Course Director 

Qualifications: Master of Herbal Medicine. Diplomas in Natural Healing, Herbal Medicine, Naturopathy, Iridology and Polarity Therapy.

Background: Peter has been at the college since 2003 and is the chair of the GNC (General Naturopathy Council, the regulator for Naturopathy in the UK. He also teaches Iridology and has been in practice in Natural Medicine since 1980. Peter is the author of the popular book Practical Iridology, which is a core text for the CNM Naturopathy course.

Bobby Qureshi

Director of Education

Qualifications: Master of Osteopathy (M.Ost.) with Distinction. CNM Diploma in Naturopathy.

Background: Bobby works closely with the CNM course directors to oversee the College’s diverse academic disciplines. In addition, Bobby lectures on Biomedicine and Naturopathy, and has previously lectured and examined musculoskeletal medicine at Master’s degree level.

Bobby has obtained a wealth of clinical experience in many UK-based practices and has also volunteered his specialist skills overseas in Kenya, India, St Lucia, and the Philippines. In his practice, Bobby regularly utilises naturopathic medicine, drawn from his further training at CNM.

Ros Morgan

Director of National and International Accreditation

Qualifications: CNM Diploma in Naturopathic Nutrition

Background: With over 20 years’ experience in establishing standards in the market research industry, Ros graduated from CNM in 2005 and has more than 10 years of clinical practice as a Naturopathic Nutritionist. She worked in the renowned Hale Clinic and at the 100 Harley Street clinic with leading clinical experts including Dr Margareta Griesz-Brisson and Lucille Leader.

Ros has worked with the GNC (General Naturopathic Council), the regulatory body for Naturopathic therapies in the UK, to establish best educational standards. She is responsible for CNM’s quality assurance policies and procedures, as well as CNM’s national and international course accreditations in the UK, Ireland, Europe, and overseas. This includes associations and regulatory bodies such as the General Naturopathic Council (GNC) and the Accreditation Service for International Colleges (ASIC).
