1. The Course
The CNM Natural Chef Diploma Course or CNM Vegan Natural Chef Diploma Course is open for everybody. CNM students and applicants who are already qualified in Anatomy & Physiology or Nutrition can seek an exemption from the pre-requisite courses. It is at the college’s discretion to give credit to prior studies and evidence of previous training would need to be submitted and assessed.
An Internship of 100 hours in a work place setting has to be completed. The student will need to find the internship place which is not limited to the UK but must be approved by the Course Director. Any fees connected with the internship are not covered by the fee for the Natural Chef Diploma Course or Vegan Natural Chef Diploma Course.
Students must have internet access.
A Natural Chef Diploma or Vegan Natural Chef Diploma will be issued to anybody who:
- Completed How the Body Works, Nutrition for Everyday Living or Vegan Nutrition for Everyday Living, Natural Chef or Vegan Natural Chef
- Has attended at least 90% of all the lectures (in-class only) and always adhered to CNM Student Rules
- Fulfils the relevant CNM requirements of physical health and has passed the necessary exams
- Has completed all the relevant Assessments, Exams and the Internship
- Completed all payments, course fees fully paid
2. Study
The Natural Chef Diploma Course or Vegan Natural Chef Diploma Course takes about 1 year (including holidays and pre-requisites). The full course needs to be completed within 2 years.
The areas included are: How the Body Works, Nutrition, Chef Techniques, Food for Health and Business Planning. Course times are as follows (subject to change):
- How the Body Works, on-line course
- Nutrition for Everyday Living or Vegan Nutrition for Everyday Living, on-line course
- Natural Chef Diploma or Vegan Natural Chef Diploma course: In kitchen/classroom training or on-line Food fundamentals, recipe writing, food sources, energetics of food, kitchen equipment, knife skills, cooking, grilling, steaming, baking, sprouting, juicing, fermenting, therapeutic menus, business.
All courses will commence only if there are a minimum of 10 enrolled students. Late completions of the diploma course (more than 6 months after the course end date) need to repeat classes and will need to pay an additional fee.
There is an additional fee of up to £500 per day should you miss a class and need to retake a class in the kitchen. Cooking stations in the kitchen are very limited. A student dropping out means throwing away food supplies and buying again for the repetition.
Health and safety are of the utmost importance at CNM. You will need to complete a UK Food Hygiene Level 2 certificate course before starting the kitchen module.
If you are enrolled onto the Natural Chef online course, you will be in your own kitchen, using your own equipment without supervision. CNM takes no responsibility for any accidents that may occur whilst you are following the online course.
If you choose to consume any of the food or drink that is provided to you in class, as part of your course, you agree to absolve CNM of any liability or responsibility for any allergic or adverse reaction that may occur from their consumption.
