Discovering CNM’s Natural Chef changed everything
After leaving my legal career in Lebanon and moving to London with my husband and four children, I never imagined I’d be running an apothecary-style salad bar in the city’s buzzing food scene – until CNM’s Natural Chef changed everything!

What began as a way to deepen my understanding of food and health with CNM became the foundation for my wellness studio, Three Sisters Nature’s Studio.

From law books to recipe books

My early career was in law and child education, but I always had a deep passion for health and nutrition. Moving to London marked a turning point, especially during the pandemic, when my family began struggling with gut issues, hormonal imbalances and anxiety. It was then that I started exploring the powerful connection between food and wellbeing more seriously.

A friend told me about CNM’s Natural Chef course and its flexible hybrid structure. As a mother of four, being able to combine practical, in-person training with online theory was exactly what I needed. It was one of the best decisions I’ve ever made.

Bringing my vision to life

Disappointed by the quality of many salad bars in London, I began imagining something different. I wanted a space where every ingredient had purpose ­– no preservatives, no shortcuts. My vision grew into Three Sisters Nature’s Studio: part salad bar, part apothecary, and entirely focused on nourishing body and mind. Working with Conseil Ducasse, the consulting arm of world-renowned chef Alain Ducasse, I created a bespoke menu that blends functional foods with culinary excellence: house-made ferments, proteins seasoned with healing spices and fresh seasonal produce.

A wellness experience, not just a salad bar

Walking into Three Sisters feels like stepping into a carefully curated sanctuary. Warm lighting, bespoke teas, mould-free organic coffee, and music composed exclusively for the space create a sense of calm clarity. I believe food is medicine, and every detail reflects that philosophy.

My collaboration with French tea expert Lydia Gautier has added another layer to the offering, including a custom blend of dandelion, rosehip and hibiscus – floral, earthy and exclusive to Three Sisters.

An industry filled with endless opportunities

Since our successful launch in late July, Three Sisters Studio is going from strength to strength. These first few weeks have been tiring but exhilarating. I’m already thinking bigger – planning an expansion across the UK, into the UAE and Europe, and developing a line of healthy snacks for gyms, clinics, schools and hospitals. I credit CNM with giving me the skills, confidence and credibility to bring my vision to life. The course didn’t just teach me how to cook – it gave me the tools to build a brand rooted in integrity.

 The health market is booming, and if you’re observant, you’ll notice the gaps – so many products claim to be healthy, but they aren’t. That insight alone can spark brilliant business ideas. Plus, being a CNM graduate gives your brand instant credibility and a trusted foundation to build upon.

Siham’s advice for aspiring Natural Chefs

If you have a passion for food and wellness, CNM can completely change your life. Start small, stay flexible, and create something that truly reflects your values. The knowledge you gain and the network you build will give you everything you need to take the next step.

Build something that genuinely aligns with your passion. Don’t rush it: clarity takes time, and the more connected you are to your purpose, the stronger your brand will be. Surround yourself with people who challenge and inspire you, not just those you need to teach. And think practically: what’s needed right now? Maybe it’s a spice blend, a drink, or something your community is missing. Start small, stay flexible, and just begin!
